A TOUR OF CULINARIUM ALPINUM – guided tour

Our tour of the monastery is also a journey through history, from the Capuchin monastic order once based here, through to the modern centre of excellence for the cuisine of the Alpine region. An hour-long, whistle-stop tour of the centuries.

ON THE WAY IN THE EDIBLE LANDSCAPE OF THE CULINARIUM ALPINUM – Guided tour

Here we show the Edible Landscape with around 250 different varieties of fruit and berries as well as the extraordinary herb garden. This nibbling garden, which is open to the public, will feature strawberries such as the well-known “Mieze Schindler”, for example, but also the May Queen and the Easter Fairy, the red Safner raspberry from Graubünden, the black cassis from le Brassus or various pink currant varieties such as the “Verrière Blanche”. The unique alpine trellis pear collection will be built up along the monastery walls over a period of two years. During this tour we also show, if possible, the monastery hall, the Alpsbrinz cellar and the monastery shop.

ALPSBRINZ TASTING – with cheesemaker

You will experience an extensive tasting of various Alpsbrinz ripening stages with must and water, accompanied by an expert from Molki Stans. You will learn interesting things about History and production of the Alpsbrinz and visit the Alpsbrinz cellar in the CULINARIUM ALPINUM.

GUIDED TOUR OF THE CULINARIUM ALPINUM COMBINED WITH ALPSBRINZ TASTING

SEASONAL APPLE AND EV. PEAR JUICES, JUICE TASTING

You taste different apple and, depending on the season, pear and berry juices. The tasting is led by an expert and the juices can be named according to the scale of determination from fruity, flowery to toasty, spicy, etc. Experience exciting moments in completely new spheres.

WALK THROUGH THE EDIBLE LANDSCAPE AND APPLE JUICE TASTING

Our hostel rooms are not named after apple varieties for nothing: The fruit that every child in Switzerland knows is tremendously diverse in shape and taste. It thrives on valuable high trunk trees and is synonymous with biodiversity. After a walk through the edible landscape of the CULINARIUM ALPINUM, with around 250 different varieties of fruit and berries, you will taste three single-variety apple juices and experience the diversity through your senses.

LOCAL BEER DIVERSITY

You will taste different, local types of beer and receive an explanation of the origin and production of the individual ingredients from the owners of a microbrewery.

Duration: 1 hour

Bookable from Monday to Friday, on request.
Optionally, a tasting with a visit to a microbrewery in the area can also be organised.

HIKE TO THE ALPSBRINZ

Hike to one of the Alpsbrinz cheese alps, learn about alpine cheese production and enjoy an authentic experience.

Duration: 4-6 hours

Cost: Flat rate CHF 750 up to 10 persons, each additional person CHF 40. Incl. Accompaniment and cheese tasting with drink. Exkl. Public transport tickets.
Offer only possible during the alpine season (approx. June – September).

THEME-ORIENTED DO-IT-YOURSELF

PRODUCE SEASONAL AND YEAR-ROUND LOCAL PRODUCTS FROM THE ALPINE REGION YOURSELF

We offer a variety of options in our course kitchen. Let yourself be surprised by the in-house impulses and internal courses on the culinary offer.
The thematic blocks are suitable as stand-alone group events or in combination, e.g. with a guided tour of our premises. The homemade products can then be taken home as souvenirs.

Sausages with Patrick Marxer

With Patrick Marxer you will learn what makes a good sausage. They produce two kilos of sausages themselves and take them home after the course.

HOMEMADE FOR GIFTS OR FOR APERITIFS

With our accompaniment, they conjure up fine side dishes for an aperitif and make a non-alcoholic drink. You can also take individual pieces home finely packaged as souvenirs.
The whole thing is put together seasonally.
For example: spelt plait or seed crackers, green tomato confiture, mustard with ripe tomatoes, homemade butter, herb paste, drink made from mint and berries.

COOKING AND ENJOYING TOGETHER

COOKING A MAIN COURSE

With our accompaniment, they cook a main course in the course kitchen and then enjoy the result in our herb workshop or in the restaurant. Individual home-made meals can also be supplemented by our daily offer from the kitchen of the CULINARIUM ALPINUM.

MAKE YOUR OWN PART OF A SURPRISE TAVOLATA

You prepare part of your tavolata yourself in the course kitchen and then enjoy what you have cooked yourself as part of a surprise tavolata in the restaurant.
You have the following options:
Apéro and starter: After the joint aperitif in the course kitchen, they prepare a seasonal, regional and sustainable starter under the guidance of our cooking team and then have the supplemented surprise tavolata in the restaurant.
Apéro and dessert: After the joint apéro in the course kitchen, they prepare a seasonal, regional and sustainable dessert under the guidance of our cooking team and then have the surprise tavolata, complemented by their dessert in the restaurant.

COOKING A WHOLE SEASONAL MENU

On request, we can put together a seasonal and local 3-course menu (also on a special theme) to be prepared with a group and our support.
We are happy to make an individual offer based on the needs of the group. We usually make the concrete menu proposal one month before the event.
